The Soup Lady's Chickpea Stew

Aundra Lafayette aka “The Soup Lady” made Chickpea Stew. “The Soup Lady” can be found at the Richland Park Farmers Market every Saturday from 9am-12:30pm until the end of December, and from January to April from 9am-12pm. One bunch of kale
4 cups of cooked chickpeas
1/2 stick of butter
1tablespoon of turmeric
1 red onion
1 lemon
1 can of coconut milk
1 package of fresh tri color peppers
Sprinkle a herb blend
One box of veggie broth


If using fresh chickpeas, soak for a day. Saute onions, peppers, butter and kale together. After everything is cooked down a little add the chickpeas, coconut milk, veggie broth and remaining ingredients. Let the turmeric be the last thing you add. After said and done. The Soup will bring a lot of comfort, passion & LOVE to your heart!!
