Trim Healthy Mamas Treeses (Trim Reeses Peanut Butter Cups)

Treeces

Serving Size: Multiple-Serve (Makes 24 Treeces)

Get it? Trim Reeces? Treeces? Okay, we’re batty, but who cares about the silly ole name when you can eat these goodies? This is a layered tweak on the original Skinny Chocolate; it does include some peanut butter, but we’re going for the yum factor here. This recipe is found in the "Sweet Treats - Candies and Bars" section of the Trim Healthy Mama Cookbook, page 378.

INGREDIENTS:

1 Batch Skinny Chocolate:

½ cup coconut oil, extra-virgin or otherwise

¼ cup unsweetened cocoa powder

2-3 Tablespoons THM Gentle Sweet or other Stevia sweetener

Small pinch of mineral salt

 

Peanut Butter Layer:

½ cup coconut oil, extra-virgin or otherwise

¼ cup Pressed Peanut Flour

½ cup natural-style, sugar-free peanut butter (see Recipe Note)

3 generous pinches mineral salt

3 Tablespoons THM Gentle Sweet or other Stevia sweetener

INSTRUCTIONS:

1. For the Batch of Skinny Chocolate, if the coconut oil is solid, melt it by placing in a small bowl atop a small saucepan of water set over high heat.

2. Combine the melted coconut oil, cocoa, sweetener, and salt in a bowl and stir well.

3. While the Skinny Chocolate is still liquid, put 1 teaspoon of the mixture into the holes of a mini muffin tin (or you can just pour it in and eye the amounts). Place in the freezer to harden.

4. In another bowl, mix the remaining ingredients for the peanut butter layer. (If the coconut oil is solid, melt it by placing in a small bowl atop a small saucepan of water set over high heat.)

5. When the chocolate layer has frozen, pour a little of the peanut mixture into each hole and freeze again.

6. For a softer version, place the frozen Treeces in a zippy bag and store in the fridge. For a harder version, keep in the freezer.

RECIPE NOTE:

You can omit the peanut butter and use an additional 1/2 cup Pressed Peanut Flour instead for a bit more slimming effect, but the peanut butter does bring more rich creaminess to this candy, and let's not forget our Food Freedom approach. So enjoy these sometimes so long as you are also enjoying the original more skinny chocolate at other times.
