2 pineapple chunks
2 jalapeno slices
1/2 oz agave syrup (2 parts agave nectar, 1 part hot water)
3/4 oz fresh lime juice
1 1/2 oz tequila
cilantro leaves (optional)
Place pineapple chunks, jalapeno and cilantro (optional) in a glass. Using a muddler, press as much juice as you can out of the pineapple and jalapeno. Add agave syrup, lime juice and tequila. Add ice to the glass and cover with a cocktail shaker. Shake vigorously, then strain liquid into your serving glass. (dip half the rim of glass in water then salt if desired)
Garnish with an additional jalapeno slice and serve!
