1 head butter lettuce, cut base, use whole leaves

1 TBSP toasted and seasoned pumpkin seeds

1 TBSP crumbled cotija

½ avocado, sliced

3 TBSP smoked poblano ranch

3 slices of red onion. ¼ thick

½ large grapefruit, segmented


Mix butter lettuce, pumpkin seeds, cotija, avocado, grapefruit and red onions in a bowl. Toss with smoked poblano ranch.
