Yada's Italian Wedding Soup

Chef Danny Dickman from Yada made Italian Wedding Soup. (see recipe below) Yada is now open in Clarksville at 111 Franklin St., for breakfast, lunch and dinner Monday through Saturday. Italian Wedding Soup

Meatball recipe:

1 small yellow onion, diced

1/3 cup Italian parsley, chopped

1/3 cup oregano

1 egg

1/4 cup milk

1 tsp garlic minced

1 tsp salt

1/2 cup panko

1/2 cup grated parmesan cheese

1/2 lb ground pork

1/2 lb ground beef

Pepper to taste

In a large bowl, stir the onion, parsley, egg, milk, garlic, salt and panko together until blended well. Add cheese, beef and pork. When completely blended, roll into 1/2” balls and place on baking sheet. Bake at 350 for 10 minutes.

Soup Recipe

12 cups chicken broth

1 small onion, cubed

1 cup celery, cubed

1 cup carrots, cubed

3 cloves garlic, minced

2 cups fresh spinach, chopped into small pieces

1 cup dry orzo

1 Tbsp vegetable oil

Salt and pepper to taste

Sweat the carrots, onion, celery and garlic in vegetable oil. Add broth and bring to a boil in a large pot over medium heat. Add the cooked meatballs, spinach and orzo. Cook for about 7 minutes or until spinach is tender.
