MINI TACO BOWLS
Ingredients:
2 teaspoons olive oil
1 lb ground meat of choice or 2 c chopped walnuts 
juice of 1/2 lime 
1/4 c cilantro 
1/4 c chopped red bell pepper
2 tablespoons taco seasoning
1 Tbsp garlic powder
2 cloves minced garlic 
1 c black beans
1/4 c chopped white onion 
1/4 c chopped green onion 
1/2 c shredded lettuce
1/2 c diced fresh tomatoes 
1 1/4 c shredded cheddar cheese
1/2 c sour cream or plain Greek yogurt 
1 c Pico de Gallo 
Salt & pepper to taste
Dash smoked paprika
24 wonton wrappers
Directions:
Heat oven to 375 degrees 
Brown the meat or lightly toast nuts, add seasonings, minced garlic and white onion & red bell pepper
Add in black beans 
Spray muffin tins with non-stick spray add layer of wonton cups 
Add meat / nuts and cheese 
Add another layer of wonton wrappers
Add meat / nuts and cheese 
Bake until the cheese bubbles 
Mix sour cream and / or Greek yogurt with 1/4 c cilantro and 1/8 tsp garlic powder, dash of smoked paprika & lime juice - salt to taste 
Top with tomatoes, lettuce, sour cream or Greek yogurt mixture and green onions
