Star Spangled Cobbler
4 c fresh blackberries or 4 c frozen, thawed,drained blackberries
1 1/2 c sugar
3 T all-purpose flour
1 T fresh lemon juice
3 T butter
2 12-oz cans refrigerated buttermilk biscuits
1 T coarse sparkling sugar
Sweetened cream for garnish.
Assemble ingredients and utensils. Fruit mixture: toss berries, sugar,and flour, place into an ungreased 9-inch baking dish. Sprinkle mixture with lemon juice and dot with butter . Bake in a 400 degree oven for 15 minutes. Reduce heat to 325 degrees and bake for another 20 minutes. When ready to serve, top with a Star Biscuit and sweetened whipped cream.
Separate biscuits and flatten each into a 3 1/2 inch circle. Cut with a 3 inch star-shaped cookie cutter, place on cookie sheet and sprinkle with the sparkling sugar. Bake 400 degrees until lightly browned 10 minutes. When ready to serve, top each fruit serving with the biscuit.
