Chocolate Cake with Jack Daniel’s Fudge Icing

Ingredients (Cake):

1 box dark chocolate cake mix

1 (3.4 oz) box instant chocolate pudding

Dash salt

1 cup sour cream

½ cup vegetable oil

¼ cup warm water

¼ cup Jack Daniel’s Whiskey

4 eggs, beaten

3 cups semi-sweet chocolate chips

Ingredients (Icing):

1 stick butter

1 ½ cups sugar

1/3 cup evaporated milk

¼ tsp salt

½ cup semi-sweet chocolate chips

¼ cup Jack Daniel’s Whiskey

Steps:

Preheat oven to 350 degrees. Grease & flour a 9 X 13” pan (or spray with baking spray that contains flour).

Combine cake mix, pudding and salt in an electric mixer and stir on low to combine. Slowly stir in water, whiskey, eggs, sour cream and oil. Beat together on medium until fluffy, about 3 minutes. Remove bowl from mixer and stir in chocolate chips.

Pour batter into pan. Bake for 30-35 minutes until toothpick inserted in center comes out clean (you may have some chocolate on toothpick from chips). Remove from oven and let cake cool.

Icing:

In a medium saucepan, combine butter, sugar, salt and evaporated milk over medium heat. Whisk together until a rolling boil and time for 1 minute, whisking constantly. Remove from heat and add in chocolate chips and whiskey. When chips melt, pour over cooled cake……will set up quickly.

Makes 12-20 pieces depending on size.
