Hoss’ Loaded Burgers
Loaded Baked Potato Salad
Yields 10-12 servings
Ingredients:
3 lbs red potatoes, cut into cubes
1 tsp kosher salt
1/2 tsp Black Pepper
2 cups Sour Cream
1/2 cup Mayonnaise
2 tsp Apple Cider Vinegar
1 cup Shredded Cheddar
1 cup cooked & diced bacon
1/2 tsp Granulated Onion
1 tsp Dried Chives
Preparation:
Fill a medium pot 1/2 full with hot water, heat to boiling & add salt. Add the potatoes to the water and cook until fork tender. Drain cooked potatoes and allow to cool completely.
In a large bowl, whisk the sour cream, mayonnaise, apple cider vinegar, water, salt, pepper, chives, and granulated onion in a large bowl (add more/less salt to your liking). Sitr in the cheese & bacon, then fold in the cooked potatoes until fully combined. Garnish with more chives, bacon & cheese. Keep refrigerated.
