Executive Chef Dustin Schotsch from Red Phone Booth made a Hot Honey Spicy Sicilian Pizza. HOT HONEY SPICY SICILIAN PIZZA

CALABRIAN CHILI HONEY

INGREDIENTS:
• 2-3 tbsp chopped Calabrian Chilies
• 2 cups Honey
• Yields: 2 cups

INSTRUCTIONS:
In a small saucepan, over medium high heat, sauté chilies until fragrant, about 1 to 2
minutes. Add honey and bring to a simmer. Reduce heat to low and cook for 5 to 10
minutes, or until desired spice level is reached. Remove from heat, strain if desired,
transfer to a glass container and let cool.
*(Chef prefers to leave the chilies in)

SPICY SICILIAN PIZZA

INGREDIENTS:
1 - 10-ounce pizza dough
2 oz tomato sauce, crushed
2 oz bacon, diced
1 garlic clove, sliced
2 oz mozzarella
2 oz fontina (substitute white cheddar if can't find)
1 tsp dried oregano
1 tsp Calabrian chilies, chopped
1 tbsp parmesan, grated
1 tbsp Calabrian Chili Honey

INSTRUCTIONS:
Preheat oven as high as it will go with a baking stone in it, most ovens will go up to about
550 degrees. Stretch the dough round out to make a 12-inch pizza. Top with tomato
sauce, garlic, bacon pieces, mozzarella, fontina, chopped Calabrian chilies, oregano,
parmesan.
Bake for 5 to 7 minutes or until crust is golden brown and cheese is bubbling to the center.
Slice and finish with a drizzle of the hot honey (recipe above).
