Making Meringue Nests with the Family

MERINGUE NESTS

INGREDIENTS:
Pinch of salt
1/8 t cream of tartar
3 egg whites
3/4 c sugar
3/4 t vanilla
Your filling of choice

DIRECTIONS:

  • Preheat oven to 200 degrees
  • Line baking sheet with parchment paper
  • Add salt, cream of tartar and egg whites to mixer. Whisk until forthy and soft peaks form
  • Gradually add in sugar (approximately 1 Tbl at a time), waiting about 15 seconds between each addition
  • Once all sugar has been added, add vanilla, and beat for an additional 5 minutes. The egg whites should be glossy and stiff but not dry
  • Spoon mixture into a large pastry bag fitted with a star tip (or use a regular teaspoon)
  • Pipe 2-inch nests onto the lined baking sheet, making an indentation in the center (leave 1-inch between each nest)
  • Bake 225 degrees for 1 hour 15 to 1 hour 30 minutes until nests are dry (and the bottom isn’t sticking)
  • Turn off the oven and leave nests in the oven for an additional hour.
  • Remove and fill center with your topping of choice (we like to add lemon curd, strawberries & whipped cream and s’mores)
