The Grilled Cheeserie’s Spinach Artichoke Melt

Makes 4 Melts

8 Slices (8 oz) Swiss Cheese
8 Slices Rosemary Garlic Bread (or other herb-y sourdough bread)
3 oz butter
1 cup Spinach Artichoke Dip (we make ours from scratch with fresh organic spinach, Parmesan and white wine)
1-2 whole canned or jarred marinated artichokes (we marinate ours in olive oil and italian herbs and spices)

Butter one side of each bread slice. Stack one slice of cheese, 1/4 cup Spinach Artichoke Dip and some chopped artichokes on one slice, cover with another slice of cheese and a piece of bread. Repeat for 3 more sandwiches. Place on a hot griddle until bread is golden brown on both sides. Slice nad serve immediately!
