Raspberry Cheesecake Rolls

Ingredients:
Dough

1 box Hot Roll Mix
3 tablespoons sugar
1 cup warm water
2 tablespoons butter, softened
1 egg
 
Filling
1 package 8oz cream cheese
1/4 cup softened butter
1/2 cup sugar
1 tsp vanilla extract
 
Raspberries
2 packages frozen raspberries
2 tbsp cornstarch
1/2 cup sugar
 
Icing
4 cups powdered sugar
4 tbsp melted butter
2 teaspoons vanilla extract
4 tablespoons milk
 
Instructions
Prepare Hot Roll Mix according to box instructions. While dough is sitting, prepare filling. Combine cream cheese, butter, sugar and vanilla using an electric mixer until smooth. Grease 2 8-inch round pans with cooking oil or melted butter. Roll out dough on floured surface into about 16" round. Spread cream cheese filling mixture evenly over dough. In a separate bowl, mix together cornstarch and sugar for raspberries, and stir in the packages of frozen raspberries. (Keep raspberries frozen until the last minute). Sprinkle the coated raspberries evenly over the dough, and then roll the dough into a log. Cut the dough into evenly thick (about 1"-1.5") slices and place in greased pans. Cover pans and set them in a warm place to rise for a couple of hours. Once rolls have about doubled in size, bake in 375 degree oven for about 20-25 minutes until golden brown. Let rolls cool and remove them onto parchment paper. Combine all ingredients for the icing until smooth and then spread half of the bowl on each pan of rolls. Serve while fresh and store remaining in the refrigerator.
