Orange Cranberry Glazed Turkey Meatballs
Yield: 30 meatballs
Ingredients:
1 pound lean ground turkey
1 minced garlic clove
1/4 cup finely chopped onion
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup dried bread crumbs
1 egg, beaten
Glaze
1 can jellied cranberry sauce
1/2 cup of orange marmalade
1 jalapeno, finely diced
1 finely diced red pepper flakes
Directions:
· Mix all the ingredients, and shape into 30 meatballs.
· Add a tablespoon of oil to a pan, and cook the meatballs until nicely browned. Remove meatballs from the skillet.
· Combine cranberry sauce, marmalade and chicken broth over medium heat into the same skillet the meatballs were cooked. Add the jalapeno and red pepper flakes.
· Return the meatballs from the skillet and reduce the heat to medium low and cook until the sauce is reduced and meatballs are completely cooked. Season to taste with salt and pepper.
