(1) Preheat oven to 350 degrees F.
(2) Bake (1) 9” pie crust 5-7 minutes in preheated oven.
(3) In large sauce pan, combine 4-5 fresh peaches peeled, pitted and sliced into thin wedges,
• 1/4 cup white sugar
• 1/4 cup brown sugar
• 1/4 teaspoon cinnamon & nutmeg
• 1 teaspoon fresh lemon juice (optional)
• 1 teaspoon of vanilla extract
• 4 tablespoon of butter
• 2 teaspoons cornstarch
Bring to boil, toss to coat evenly and pour into 9” baking dish over pre-baked pie crust.
(4) Top cobbler with prepared pie crust and/or (buy @ frozen section in local grocery store). Sprinkle 1/4 t butter & 1/4 t sugar & 1/4 t cinnamon mixture on topping. Bake for 20-30 minutes, or until topping is golden.
