RICE CRISPY UNICORN CAKE TOPPER
4 cups rice cereal
10 oz mini marshmallows
2 tablespoon butter
2 tbsp. white chocolate, melted
1 tsp. butter extract
2 tsp. vanilla extract
1 tbsp. shortening (to help with stickiness)
Microwave marshmallows and butter for 20-30 seconds at a time until completely melted. Stir.
Add vanilla and butter extracts to marshmallow mixture. Stir until completely combined, add in rice cereal until cereal is completely coated in marshmallow. Add white chocolate as needed and sculpt your unicorn head by following a photo of a horse, start with the neck and head and press out the body with your fingertips.
Your rice cereal should start to become more fine and flattened to the point you cannot see individual cereal anymore.
Press out the eyes, nostrils and mouth of your unicorn and cover with clear piping gel and fondant, make all facial features with fondant including two eyes, colored hair, ears and a horn and apply to unicorn.
