Thyme & Lemon Roasted Turkey

Lemon Rosemary Thyme Roasted Turkey

1 T Kosher Salt

1 T crushed rosemary leaves

Grated zest of 2 lemons

12-14 pound Turkey

1 large yellow onion, quartered

2 lemons, quartered

10 sprigs fresh thyme

6 T unsalted butter, melted

Several days before serving, rinse the thawed turkey and pat dry. Combine salt, rosemary and lemon zest in a small bowl. Loosen the skin of the turkey and place lemon and spice mixture under the skin. Sprinkle some on the inside of the turkey cavity, reserving about 2 T of mixture. Brush the outside of the turkey with melted butter, and sprinkle the remaining spice mixture on the outside of the turkey. Wrap with plastic wrap and refrigerate until ready to roast. *

Assemble ingredients and utensils. Preheat oven to 450 degrees.. Remove plastic wrap, place turkey in roasting pan and place the onion quarters, lemons and thyme in the cavity. Tie the legs together with kitchen string.

Roast the turkey for 45 minutes at 450, then lower the temperature to 325 and roast for about another hour until a test with a meat thermometer reads 165 degrees for the breasts, the legs and thighs will be around 175. Remove from the oven and cover with foil. Allow to rest for30 minutes before serving.

Yield 8-10 servings

*Note – if you don’t have time to prep the turkey several days ahead, follow the same process and put directly in the oven. It turns out fine!
