Ann Cox Eastes from Kroger shows us how to make Crockpot Chicken and Mushroom Soup!
CROCKPOT CHICKEN AND MUSHROOM SOUP
1 lb chicken breasts or chicken tenders, cut into small pieces
1 (8-oz) pkg sliced mushrooms
1 (8-oz) pkg Kroger cream cheese or Neufchatel cheese
1 (10 ½ oz) can Kroger cream of mushroom or cream of chicken soup
1 ½-2 c Kroger chicken broth
½ c red pepper cut in julienne strips
½ t pepper and paprika
Coat the inside of a crockpot with vegetable spray. Layer chicken and mushrooms in the bottom of a crockpot. In a small bowl combine cream cheese, soup and broth; heat in microwave for 1-2 minutes to soften. Stir to mix completely. Pour over chicken and mushrooms in crockpot. Add red pepper pieces. Cook on High for 3-4 hours or Low for 5-6 hours. Serve with toasted French bread or crackers. This is a thick soup which could also be served over rice or egg noodles. . Yield: 4 servings
